 Dalo - Dalo is a root crop.  Most people in Fiji eat a lot of this.  We hope they will add more green vegetables to their diet like moca - which is like spinach.

I love to go to the market.  Joe made dahl this morning and we are going to try making stuffed cabbage.  Joe just started his tomatoes and we are planting watermelon in the garden.  We want to plant avocado trees to grow long after we leave.
  ENERGY BAR RECIPE:  2 cups of oats, 1 cup peanut butter, 6Tbs. honey, 1/2 C chopped dates and 1 tsp. vanilla.  Mix, Spread, Slice, Refrigerate and Enjoy!

SAI BABA

Sai Baba or Bhagavan Baba died on April 27, 2011 at age 85 ( or 96 years in terms of sidereal lunar calendar by ancient Vedic calculations).   "Love All, Serve All".  Dr. Rajat and Dr. Swaran have named their clinic Viseisei SAI Health Center for their belief.  The Sathya Sai Service Organization is a service organization dedicated to the upliftment of humanity through the universal human values of truth, right conduct, peace, love and non-violence.  Unity of Faiths..".Let the different faiths exist, let them flourish, and let the glory of God be sung in all the languages and a variety of tunes.  That should be the ideal. All religions are pathways to the same one GOD."
  Free medical, dental and optical camps  will be provided in May for the poor and needy in Fiji.   The medical team will be at our clinic on May 10th....I will post pictures later.......

NEW FRIENDS....

Gary and Patty are from South Dakota.  They are retired, sold their home and live in an RV and travel. We originally met them at Christmas time when they were on their way to Australia to visit their son who does ER medicine.    They are on their way to Italy next for a couple of months and then to Ecuador!!!!   Now, I think I might like that!!!!!!

There are lots of Australian International Volunteers here with a love for adventure and service.  We have been fortunate to meet many wonderful people from Fiji, Australia, New Zealand, Americas.  We all become citizens of the world......taking care of each other.......

KAVA AND ICE CREAM

MILES AND SR. ANNA

Miles is a Peace Corps Volunteer from Navua and came to speak on "Greatest Loser".  Miles and his village community put on a fun competition for weight loss based on the TV program.
     Sr. Anna is from the Daughters of Charity and is working with the Department of Agriculture in creating healthy food snacks made from natural fruits and vegetables.  She made a tamarind drink, sweet potato jam, hibiscus tea, cassava/hibiscus roll.   Tamarind tea is supposed to make you younger....I am drinking it everyday now!!!!!!
     Great Speaker Series Joe, Sheetal and Ben.....it was fun, and successful.
 







Peace Corps Volunteers and friends came for dinner .......Mary, Miles, Kayla, Ashley, Chris, Katie, and Matt.  They come for the cold beer!

SANGEETA AND JESSE

As part of the NCD project - Joe, Sheetal and Ben, have arranged for four speakers to come and talk on Nutrition and Wellness.  Sangeeta is a nurse and talked on breastfeeding and gave a demonstration on making your own baby food using fruits and vegetables from Fiji.  Jesse is a dietician from Australia and works for Red Cross.  She did a program on Cash for Calories.  Both were excellent.  Next week we will have Miles and Sr. Anna......

 John has planted 70 different fruit trees.  He starts a lot from seed and grafts them for faster growth.  He built his greenhouse that is open to the rain or he covers if too much rain.  Last year he had more pumpkin than he could use.  I hope I labeled these correctly!!!
