Watermelon/Tomato Salad


Watermelon and tomatoes are in season here.....my favorite new recipe!


5 Cups of seeded watermelon ( 3/4 inch) cubes 
3 Cups of ripe tomatoes ( 3/4 inch) cubes
1 small red onion, quartered and thinly sliced
3 tsp. sugar

1/2 tsp. salt
1/2 cup red wine vinegar

1/4 cup olive oil or canola oil
 Black pepper to taste

Combine watermelon and tomatoes in a large bowl with sugar and salt, tossing to coat. Let stand 15 minutes
Stir in onion, vinegar and oil. Cover and chill 2 hours. Serve chilled over lettuce leaves. Sprinkle with black pepper to taste.
